Covers the term used for a product whose main ingredients, composition or preparation, production method or processing are essentially traditional.
This quality mark acknowleges only the traditional character of the specialty product without making any reference to the geographical area of production. For this reason mozzarella cheese produced in France or Germany may be granted a TSG mark provided that is produced in compliance to italian traditions.
